Zucchini Noodles With Avocado Cream Sauce & Tilapia

Ingredients
  

  • 1 medium yellow zucchini spiralized
  • 1 medium green zucchini spiralized
  • 1 Bumble Bee SuperFresh® Tilapia with Lemon Pepper & Herbs package (2 filets), defrosted
  • Avocado Sauce:
  • 2 ripe avocados
  • 2 jalapenos chopped, seeds removed and discarded
  • juice of 1 lemon
  • 6-7 fresh basil leaves chopped
  • 4 garlic cloves
  • 1 teaspoon lemon zest
  • salt and pepper
  • Garnish:
  • 2 cherry tomatoes chopped
  • fresh basil leaves

Instructions
 

  • Preheat oven to 400F.
  • Cook fish per package instructions, by placing in the provided parchment paper pouches and baking for 18 minutes.
  • In the meantime, wash and spiralize the zucchinis, distribute equally into 2 medium pasta bowls.
  • Place all the ingredients for the avocado sauce in a food processor and process until well combined, stop and season with salt and pepper as needed.
  • Pour the avocado sauce over the zucchini noodles, stir to combine, top with the baked fish.
  • Garnish with chopped tomatoes, basil leaves and serve.
