Ingredients

  • 3 lbs ground turkey
  • 4 medium sweet potatoes peeled and diced
  • 2 cups green beans trimmed and chopped into 1-inch pieces
  • 1 cup frozen peas

Method

  1. In a large skillet over medium-high heat, cook the ground turkey until fully browned and cooked through, 8-10 minutes. Break up the meat as it cooks. Drain excess fat.
  2. Meanwhile, place the diced sweet potatoes in a large pot and cover with water. Bring to a boil over high heat. Reduce heat to medium-low and simmer for 8-10 minutes until fork tender.
  3. Add the chopped green beans to the pot with the sweet potatoes during the last 3 minutes of cooking. Drain the potatoes and beans.
  4. Add the cooked turkey, sweet potatoes, green beans and frozen peas to a large bowl. Mix well until fully combined.
  5. Allow the mixture to cool completely before serving. Portion into individual servings and refrigerate or freeze.
