Ingredients

  • 2 oz 60 ml Dill Pickle Juice
  • 1 oz 30 ml Non-Alcoholic Tequila or Regular Tequila
  • 1 oz 30 ml Fresh Lime Juice
  • 0.5 oz 15 ml Jalapeño Simple Syrup or Regular Simple Syrup (optional)
  • Sparkling Water to top off
  • Tajín and Chamoy for rimming the glass
  • Gherkin Pickles for garnish
JALAPENO SIMPLE SYRUP
  • 1 cup water
  • 1 cup allulose or sugar
  • 1-2 jalapeno peppers sliced

Method

Jalapeno Simple Syrup
  1. Combine the allulose or granulated sugar, water, and jalapeños in a small saucepan. Stir until everything is combined.
  2. Warm over medium-low and heat until the sugar is completely dissolved. This process takes about 5 minutes.
  3. Pour the sugar mixture through a sieve into a mason jar or jar of choice.
  4. Cover with a lid and refrigerate until cool. Throw away the jalapenos or add them to your mocktail.
Pickle Margarita
  1. To a cocktail shaker, pickle juice, non-alcoholic tequila, lime juice, and simple syrup. Shake vigorously for 20 seconds.
  2. Dip the rim of the glass into a shallow dish of chamoy or hot honey, then dip in Tajin seasoning or salt.
  3. Pour the contents of the cocktail shaker into a cocktail glass or margarita glass over ice cubes and top off with sparkling water. Garnish with pickles.
Rimming the Glass
  1. Choose Your Rim Coating: Use Tajín for a spicy, tangy flavor that complements the margarita. Chamoy can add a sweet and spicy kick, enhancing the overall taste. For a classic touch, opt for coarse sea salt or regular salt.
  2. Prepare the Rim: Moisten the rim of your glass with lime juice, chamoy, or even hot honey to help the coating stick.
  3. Dip the rim into a shallow dish filled with your chosen coating (Tajín, chamoy, or salt) to ensure an even layer.
  4. Layering Flavors: For an extra flavor boost, consider doing a combination of coatings. For example, rim with chamoy first, then dip in Tajín for a sweet and spicy mix.
  5. Feel free to try other rimming options like crushed red pepper flakes or sugar for a sweeter rim.

Notes

Tips for the Recipe

  • Adjust Sweetness: Modify the amount of simple syrup or agave syrup based on your preference for sweetness.
  • Spice Level: If you prefer a milder drink, remove the seeds from jalapeños or omit them entirely.
  • Chill Your Glass: For an extra refreshing experience, chill your glass in the freezer before serving.
  • Mocktail Option: This recipe can easily be made as a mocktail by using non-alcoholic tequila or omitting alcohol altogether.
  • Blended Version: For a frozen margarita, blend all ingredients with ice until smooth.

Recipe Notes

  • Pickle Juice: The type of pickle juice you use can significantly affect the flavor. Sweet pickle brine will yield a sweeter drink, while dill pickle juice will provide more tartness.
  • Tequila Choice: Use your favorite Blanco tequila or a non-alcoholic alternative for a satisfying drink.
  • Garnishes: Gherkin pickles work well as garnishes but feel free to use other types of pickles based on your preference.
