  • 1/2 cup 1 stick unsalted butter
  • 1/2 cup heavy cream
  • 1/2 cup granulated sugar
  • 1/2 cup packed light brown sugar
  • 1/8 teaspoon salt
  • 1 cup toasted pecan halves
  • 1 teaspoon vanilla extract
  • 2 cups confectioners' sugar sifted

Method
 

  1. Grease an 8-inch square baking dish.
  2. In a large saucepan, bring the butter, heavy cream, granulated sugar, brown sugar, and salt to a boil over medium heat, stirring frequently. Allow to boil for 5 minutes, stirring constantly.
  3. Remove the pan from heat and stir in the toasted pecans and vanilla.
  4. Add the sifted confectioners' sugar and stir until smooth and well combined.
  5. Spread the fudge mixture into the prepared baking dish.
  6. Allow to cool to room temperature, then cut into 1-inch squares and serve, or store in an airtight container.

Notes

Ensure to stir the fudge mixture constantly while boiling to prevent it from sticking to the bottom of the pan and burning. Use a heavy-bottomed saucepan for even heat distribution and better results.
