Ingredients

  • 1 unbaked 9-inch pie crust
  • 1 cup granulated sugar
  • 1/2 cup light brown sugar
  • 1/2 teaspoon salt
  • 1 cup light corn syrup
  • 1/2 cup dark corn syrup
  • 1 teaspoon vanilla extract
  • 1/3 cup unsalted butter melted and slightly cooled
  • 3 large eggs lightly beaten
  • 2 1/4 cups pecan halves or coarsely chopped pecans

Method

  1. Preheat oven to 350°F.
  2. In a large bowl, whisk together the granulated sugar, brown sugar, salt, corn syrups, vanilla, and melted butter until smooth.
  3. Add the eggs and whisk until fully incorporated.
  4. Stir in the pecans.
  5. Pour the filling into the unbaked pie crust. Arrange a few extra pecan halves on top if desired.
  6. Bake for 45-55 minutes, until the center is almost set. The pie should be slightly jiggly in the center when done.
  7. If the crust or pecans start browning too quickly, loosely cover with foil.
  8. Allow to cool completely, at least 2 hours, before slicing and serving. Refrigerate leftovers.
