Weekly Meal Plan – March 4, 2013
It’s been awhile since we posted a weekly meal plan. Sometimes real life just gets in the way and our grocery budget has unfortunately suffered because of it. So I am hoping to get back into the habit of meal planning on a regular basis. I actually planned out meals for the rest of March because I want to get some freezer cooking done. I don’t do a huge all-day freezer cooking session as I never have time for that. I prefer to add to our deep freezer a little at a time, mostly by making double batches of the meals that we are having during the week. Anyway, here’s our weekly meal plan: Sunday: Chicken and Broccoli Casserole, Mixed Berries Monday: Oven Baked Tacos, Brussels Sprouts, Fresh Pineapple Freezer cooking: Make extra refried beans and fry up extra seasoned ground beef. Weekly Meal Plan – July 2, 2012
Can you believe it is the 4th of July already? Do you have any big plans for the day? We are going over to my parents’ house for a cookout. Then we will be heading over to the community park to watch the fireworks. I hope the weather is nice! Anyway, here’s our weekly meal plan: Sunday: Popcorn Chicken, Greek Yogurt Potato Salad, Eggplant Prep work the night before: Make potato salad Monday: Chicken Crescent Rolls, Sweet Potato Fries, Cantaloupe Tuesday: Spaghetti, Sauteed Zucchini, Cherries Wednesday: 4th of July Cookout. Weekly Meal Plan – June 24, 2012
I am trying to get back on track with meal planning. With all the kids’ activities, we have been eating out way more than we should. At $40+ a pop, it quickly eats away at our budget. Anyway, here’s our weekly meal plan: Sunday: Roasted Chicken, Quinoa with Avocado dressing, Leftover veggies Whenever I make roasted chicken, I throw a second one in at the same time. Then I freeze all the leftover chicken to use in recipes later. It’s a huge timesaver to have 4-6 cups of cooked chicken in the freezer for future recipes. Then I throw the bones in the crockpot to make homemade chicken broth overnight that I will use later in the week. The quinoa is basically my quinoa salad minus the cheese and eggs.
