Pesto Chicken Melt With Brownberry Sandwich Thins {and a Giveaway}

Make a Quick and Healthy Lunch with Sandwich Thins from Brownberry
Since I work from home, I am always searching for healthy lunch ideas that are quick to make.  I recently discovered Brownberry Sandwich Thins and have been really enjoying making sandwich melts with them by topping with some meat, a thin slice of cheese, and assorted veggies and sticking it in the oven until the cheese is melted.  Yum!

Today I thought I would share a recipe for my favorite Pesto Chicken Melt Sandwich.  I can’t wait until summertime when I will have fresh basil growing like a weed in my garden.  I make a ton of fresh pesto in the summer.  When that time comes, I will probably be eating these yummy sandwich melts everyday!

Pesto Chicken Melt #recipe featuring Brownberry Sandwich Thins

Pesto Chicken Melt Recipe

  • 1 Brownberry Sandwich Thin Roll (I used 100% Whole Wheat)
  • 2 Tbs Pesto (when basil is in season, I make my fresh pesto recipe)
  • 1/4 cup sauteed red pepper and red onions
  • 1 thin slice of muenster cheese

Preheat the oven to 350 degrees.  On the bottom of the Sandwich Thin roll, spread the pesto.  Top with the sauteed onions and peppers and then the chicken.  Cover with the slice of Muenster Cheese then add the roll top.  Bake 5-10 minutes or until cheese is melted.

I usually make a bunch of these up in advance and stick them in the fridge.  Then at lunch time, all I have to do is stick it in the oven for a few minutes.  Add a piece of fruit and I have a nice healthy lunch that just took minutes to make.

My kids have also been using these Brownberry® Sandwich Thins for a quick after school snack.  They love to spread them with peanut butter and top them with sliced bananas.  Yummy!
