I don ‘t know about you, but I like to do a lot of the Thanksgiving meal prep work ahead of time. That way I can watch the parade and enjoy the morning with my family instead of cooking. This make ahead mashed potatoes recipe is one of our family’s favorites. The cream cheese adds a richness to the potatoes that will make it hard to stop with just one serving. You can whip up the recipe 2-3 days beforehand and put it in the fridge. Then on the big day, all you have to do is stick it in the oven. Easy Peasy!
Make Ahead Mashed Potatoes Recipe
(This recipe serves our 6 member family with some leftovers. If you are having a large family gathering, you may want to double it.)
- 5 lbs potatoes
- 8 oz cream cheese
- 1 cup sour cream
- 1 tsp salt
- 1/4 tsp pepper
- 4 tbs butter
Peel and dice potatoes. Boil until tender. Using an electric mixer, beat the potatoes until no lumps remain. Add cream cheese, sour cream, salt, and pepper. Mix until well-combined and creamy. Spread into a 9×9 inch baking pan. If you aren’t making it immediately, cover and refrigerate it.
Preheat oven to 350 degrees. Dot with sliced butter and sprinkle with paprika. Bake for 30 minutes.
