After a freakishly warm winter, we are getting hit with some unseasonable cold weather here in Ohio. Normally at this point in the year, we are frost-free but we had another freeze last night. Brrrrrrrr! Come back Spring!
Anyway, here’s what we are eating this week:
Monday: Chicken and Noodle Soup, Roasted Asparagus, Pineapple
Prep work that morning: Put chicken in crockpot
Tuesday: Cabbage Roll Casserole, Roasted Radishes, Cantaloupe
Prep work the night before: Soak rice.
Prep work that morning: Cook rice, assemble casserole
Wednesday: Chicken Pot Pie – loosely based on this recipe, Salad, fruit
Prep work the night before: Soak biscuit dough.
Prep work that morning: Cook chicken in the crockpot
Prep work the night before: Soak beans, Soak rice
Prep work that morning: Make refried beans
Friday: Homemade Pizza, Broccoli Slaw Salad, Fruit Salad
Prep work the night before: Soak pizza dough
Prep work that morning: Cut up veggies
