Chipotle Copycat Recipe – Make Chipotle at Home

If we have to eat out, Chipotle is my fast food of choice.  I know it’s not the best thing in the world for me, but it is sooooo good.  Recently I came across a recipe for Chipotle’s rice and was excited that I could now make it at home.  The best part is that I know exactly what is going into it and can choose healthier ingredients. I usually get the Bean Fajita Burrito with black beans, peppers and onions, their signature rice, mild salsa (yes I am a wimp!), cheese, and sour cream in a flour tortilla.  By making a couple of adjustments, I can serve this at home and feel good about it. Quinoa Salad with Avocado Dressing Recipe

Quinoa is one of our favorite grains. It is a great for vegetarians to add to their diet, because it is higher in protein that other whole grains.  If you have never tried quinoa, I urge you to give this recipe a try. If you can cook rice, you can cook quinoa. This particular dish started out with a recipe from 101 Cookbooks. However over the past year or so, I have messed around with it so much, that it is quite different now. We love to take this recipe in a cooler on picnics in the summer. It is full of protein and heart-healthy fats. Plus it tastes yummy!
