Weekly Meal Plan – July 2, 2012

Can you believe it is the 4th of July already?  Do you have any big plans for the day?  We are going over to my parents’ house for a cookout.  Then we will be heading over to the community park to watch the fireworks.  I hope the weather is nice! Anyway, here’s our weekly meal plan: Sunday:  Popcorn Chicken, Greek Yogurt Potato Salad, Eggplant  Prep work the night before:  Make potato salad Monday:  Chicken Crescent Rolls, Sweet Potato Fries, Cantaloupe Tuesday:   Spaghetti, Sauteed Zucchini, Cherries Wednesday: 4th of July Cookout.   I am bringing my Patriotic Trifle and a cheese ball Thursday:   Chicken Parmesan, Rice, Cauliflower Friday:  Homemade Pizza, Broccoli Slaw Salad, Fruit Salad Prep work the night before:   Soak pizza dough Prep work that morning:  Cut up veggies Saturday: Leftovers Visit Organizing Junkie for even more great meal plan ideas.  So tell me…  Do you meal plan?  Do … Continue reading

Weekly Meal Plan – June 24, 2012

I am trying to get back on track with meal planning.  With all the kids’ activities, we have been eating out way more than we should.  At $40+ a pop, it quickly eats away at our budget. Anyway, here’s our weekly meal plan: Sunday:  Roasted Chicken, Quinoa with Avocado dressing, Leftover veggies Whenever I make roasted chicken, I throw a second one in at the same time.  Then I freeze all the leftover chicken to use in recipes later.  It’s a huge timesaver to have 4-6 cups of cooked chicken in the freezer for future recipes.  Then I throw the bones in the crockpot to make homemade chicken broth overnight that I will use later in the week. Healthy Weekly Meal Plan – April 23, 2012

After a freakishly warm winter, we are getting hit with some unseasonable cold weather here in Ohio.  Normally at this point in the year, we are frost-free but we had another freeze last night.  Brrrrrrrr!  Come back Spring! Anyway, here’s what we are eating this week: Monday:  Chicken and Noodle Soup, Roasted Asparagus, Pineapple Prep work that morning:  Put chicken in crockpot Tuesday:   Cabbage Roll Casserole, Roasted Radishes, Cantaloupe Prep work the night before:  Soak rice. Prep work that morning:  Cook rice, assemble casserole Wednesday: Chicken Pot Pie – loosely based on this recipe, Salad, fruit Prep work the night before:  Soak biscuit dough. Weekly Meal Plan – October 17, 2011

We have been enjoying warm weather lately, but that is all supposed to change this week.  I guess we will be back to normal October weather  We took the kids out yesterday to a farm to pick out a pumpkin to carve.  We visited their corn maze, took a wagon ride, and wandered the pumpkin patch looking for the perfect one to carve.  It was a great time!  We also picked up some smaller sugar pumpkins that I want to make into pumpkin puree to freeze.  I am looking forward to making roasted pumpkin seeds as well.  I love this time of year! Anyway, here’s what we are eating this week: Monday:  Pizza Meatloaf, Make Ahead Mashed Potatoes, Roasted Carrots Prep work that morning:  Make a double batch of potatoes.  Start a batch of beef broth in the crockpot to use later in the week. Healthy Weekly Meal Plan – September 19, 2011

There has been a definite chill in the air this past week.  I look forward to including more soups and stews on the menu as the days get colder. Anyway, here’s what we are eating this week: Monday:  Quinoa Salad with Avocado Dressing, Butternut Squash Soup, Watermelon Prep work that morning:  Prepare salad and make the soup. Tuesday:   Porcupine Meatballs, Make Ahead Potatoes, Steamed Broccoli Prep work the night before:  Soak rice.  Make a double patch of potatoes and save the second batch for later in the week. Prep work that morning:  Cook rice, reserving 1/2 cup for the meatballs.  Refrigerate remaining rice for burrito bowls later in the week.  Make tomato soup.  Assemble meatballs. Wednesday: Chicken Pot Pie, Cantaloupe Prep work the night before:  Soak biscuit dough.  Roast 2 chickens at the same time.  From the second chicken, reserve 2 cups chicken for the pot pie, and 2 … Continue reading

Healthy Weekly Meal Plan – June 20, 2011

My husband is moving to a new office this week only 5 minutes from home!  So he is going to be able to come home for lunch each day.  I am so excited.  Of course now that means that I need to make something more substantial for lunch each day.  We are slowly adjusting to having all 4 kids at home for the summer.  It has made the fact that I work from home interesting but we will work out a routine eventually. Anyway, here’s what we are eating this week: Monday:  Beef Stroganoff with Sourdough Noodles, Steamed Brocolli, Watermelon Prep work that morning:  Prepare noodle dough and allow to soak until 4. Healthy Weekly Meal Plan – June 13, 2011

The kids are finally out of school!  I am looking forward to lots of picnics and fun activities with them.  I think this is the summer that I finally teach our oldest daughter to cook.  She has been resistant thus far, wanting nothing to do with it and only helping with meals when asked.  Since she took a home ec class this past school year and learned a few simple recipes, she seems more open to learning now.  I don’t want her to end up like I did, scrambling to learn to cook the month before my wedding! Any tips for teaching a reluctant teenager to learn to cook?
