I have 5 gigantic rhubarb plants in my garden, so we have been enjoying the abundance this spring. I have been making rhubarb recipes left and right. One of our family’s favorites is Strawberry Rhubarb Muffins. I just love the taste combination of tart rhubarb with sweet and juicy strawberries. Pure heaven! These make a great breakfast or snack. Strawberry Rhubarb Muffins Recipe 1/4 cup butter 1/4 cup coconut oil 3/4 cup honey 2 cups whole wheat flour 1 tsp baking powder 1 tsp baking soda 1/2 tsp salt 1 egg 1 cup plain yogurt 1/2 tsp almond extract 1 cup chopped rhubarb 1 cup diced strawberries Preheat oven to 400 degrees.  Grease 2 muffin tins or use paper liners to make things easy.  Using an electric mixer, cream together butter, coconut oil, and honey.  In another bowl, whisk together the flour, baking soda, baking powder, and salt.  To the … Continue reading

Children who learn healthy eating habits while they are small are more likely to continue eating healthy as an adult.  One fun way you can encourage your child to eat more fruits and vegetables is to try to get them to “eat a rainbow” each day.  Phytonutrients found in fruits and vegetables are what gives them their different colors.  They are also essential for keeping us healthy.   It is very important to eat a variety of colors each day. I am making a huge effort to get more organized with my scrapbooking this year.  In past years, I have just stored the photos and keepsakes.  It was quicker and easier to just make a dvd photo slideshow.  However, after discovering that the disks I made years ago no longer play on any of our computers or dvd players, I decided to go back to traditional scrapbooking.  Considering I have a child who just graduated and another entering high school, this is a humongous task.  That is a whole lot of papers!  In an effort to get all the keepsakes and photos organized by year, I made a school days memory keeper binder for each of my kids. Although I typically make this simple roasted butternut squash soup recipe during the fall, I have to admit sometimes I make it during the summer and eat it cold.  I am weird like that!  No matter what time of the year you make it, this soup contains just a few nourishing ingredients, but is tasty and filling. Just 1 cup of Butternut Squash contains 100% of the recommended daily intake of vitamin A.  In addition it is a good source of vitamin C, and potassium.  With over 5 grams in a 1 cup serving, butternut squash is also a good way to get more fiber in your diet. Weekly Meal Plan – June 24, 2012

I am trying to get back on track with meal planning.  With all the kids’ activities, we have been eating out way more than we should.  At $40+ a pop, it quickly eats away at our budget. Anyway, here’s our weekly meal plan: Sunday:  Roasted Chicken, Quinoa with Avocado dressing, Leftover veggies Whenever I make roasted chicken, I throw a second one in at the same time.  Then I freeze all the leftover chicken to use in recipes later.  It’s a huge timesaver to have 4-6 cups of cooked chicken in the freezer for future recipes.  Then I throw the bones in the crockpot to make homemade chicken broth overnight that I will use later in the week. The New Pixar Movie Brave – Does It Live Up to the Hype?

My husband and I took the kids last night to see the new Pixar movie Brave.  I tend to love Pixar movies, even when I really didn’t have any desire to see them in the first place (i.e. Toy Story).   My two youngest girls loved it, but I have mixed feelings about it.  Parts of it were beautifully done, but I don’t think it was Pixar’s finest work. Brave Summary (from IMDB.com): Determined to make her own path in life, Princess Merida defies a custom that brings chaos to her kingdom. Granted one wish, Merida must rely on her bravery and her archery skills to undo a beastly curse. Things I loved I thought the music in Brave was hauntingly beautiful.  I love Celtic music. A Wicked Good Time Seeing Wicked the Musical

I have a list of Broadway musicals that I just have to see when they come to the Schuster Center in Dayton, Ohio. Recently that list increased by one. My heart has been captivated by the story of the Wicked Witch of the West. If you haven’t had the chance to see Wicked the Musical yet, you don’t know what you are missing. The amazing songs and spectacular sets left me feeling like a little kid again, staring at the stage in awe the whole time. If you are only familiar with The Wizard of Oz, you don’t know the whole story. Glinda, the good witch, is actually vain and self-centered. Elphaba, who becomes the wicked witch, is actually kind-hearted, passionate, and always striving to do the right thing. Wicked the Musical takes everything you know about Oz and turns it inside out.
